I Love Italian Wine and Food - The Umbria Region
Umbria lies smack dab in the middle of Italy. The countryside is unspoiled and dotted with medieval churches. Its fairly gentle terrain is composed of hills, valleys, and small mountains. Umbria is the only region of Italy with neither a seacoast nor a foreign border. But it has lakes, rivers, and even a waterfall. It is known as the green valley of Italy. In spite of this name, until a few decades ago Umbria kept losing population to the more highly industrial north. Its total population is about 830 thousand.
Umbria was settled by the Umbri, perhaps the first inhabitants of Italy. They were forced into the mountains by the Etruscans, who were conquered by the Romans and then the Lombards. The poet Dante considered it the most violent part of Italy.
Umbria is particularly known for pork, dried pasta, and both black and white truffles. It also produces specialty breads and a wide variety of vegetables and meats. Fish and eels from the Tiber River and Lake Trasimeno abound. Cheeses include Pecorino Toscano, reviewed below.
Umbria’s capital is Perugia, a beautiful medieval city with a population of 150 thousand. Among other things Perugia is known for chocolates and Italian as a second language classes. Another famous Umbrian city is Assisi, the home of St. Francis of Assisi.
Umbria devotes about 41 thousand acres to grapevines, it ranks 15th among the 20 Italian regions. Its total annual wine production is about 19.5 million gallons, giving it a 16th place. About 58% of the wine production is white, leaving 42% for red. The region produces 11 DOC wines. DOC stands for Denominazione di Origine Controllata, which may be translated as Denomination of Controlled Origin, presumably a high-quality wine, and 2 DOCG red wines, Montefalco Sagrantino and Torgiano Rosso. The G in DOCG stands for Garantita, but there is in fact no guarantee that such wines are truly superior.
About 30% of Umbrian wine carries the DOC or DOCG designation. Umbria is home to about thirty major and secondary grape varieties, about two thirds white.
Widely grown international white grape varieties include Chardonnay and Trebbiano. The best known strictly Italian white variety is Grechetto, used in the its flagship Orvieto DOC wines.
Widely grown international red grape varieties include Cabernet Sauvignon, Gamay, and Merlot. The best known Italian red variety is Sangiovese, now grown elsewhere such as in California.
Before we review the Umbrian wine and cheese that we were lucky enough to purchase at a local wine store and a local Italian food store, here are a few suggestions of what to eat with indigenous wines when touring this beautiful region.
Start with Zuppa di Lenticchie di Castelluccio, Castelluccio Lentil Soup, which with local bread can be a meal in itself.
Later try Porchetta alla Perugina, Roasted Suckling Pig with Wild Fennel, Rosemary, and Garlic.
For dessert indulge yourself with Serpentone delle Monache di Perugia, Nut and Fruit “Snake” of the Capucin Nuns.

Lungaraotti Pinot Grigio 2004 12% about $12
I haven’t always been happy with Italian Pinot Grigio, or for that matter with non-Italian Pinot Gris. These wines often are weak. However, I thought that this particular Pinot Grigio was a fine wine for its price when it accompanied the right food. The sales literature suggested that this light-bodied, vivid, and balanced wine would be a great match for antipasti. My mistake was pairing it with non-imported antipasti, really more of a mediocre relish, which overpowered the wine. I later tried this wine with cold barbecued chicken in a moderately spicy Thai sauce and was quite pleased. Its citrus flavors really shone. I could taste this wine’s subtle complexity.
Pecorino Toscano is a sheep’s milk cheese that has been made in Tuscany and neighboring Umbria for thousands of years. Soft Pecorino Toscano is white with a tinge of yellow, while semi-hard Pecorino Toscano is pale yellow. It is moderately strong smelling and has a complex nutty flavor. I thought that it blended very nicely into the wine.

Mountain Bikes – A Mainstream Riding Style
Mountain bike riders must have shock system type of bikes that include full suspension and hard tail and even no suspension. The shock system is important as because it helps to absorb the impact over rugged terrain that provide a smoother ride. Full suspension bikes got suspension in both the front and the rear of the bike. Hard tail bikes have solid rear fork and shock system in place of the front fork. Mountain bikes with lower end models do not have a shock system in the front or in the back of the bike.
Types of Mountain Bikes to Enjoy
Mountain bikes for cross-country riders are ideal for small to moderate train and they got both climbing and descending capabilities as well. The travel in the rear suspension system is less than four inches that does not hinder the ability to climb hills. The standard numbers of gears on cross-country bikes are 28 providing a wide range of gears suitable for the traveling over varied terrain.
In mountain bikes, trail bikes are more substantial than cross country bikes as they are intended for use for more technical mountain bike rides. The travel in suspension systems used on these bikes ranges is from 4-7 inches. This increased travel allows for a very smoother ride but makes pedaling uphill more difficult too. Mountain bikers have to weigh the decreased pedal efficiency versus a smoother ride.

The amount of travel in the suspension systems makes it difficult to pedal uphill, for this reason these bikes are used almost exclusively for the downhill races where the shock systems allows smooth possible ride over harsh terrain at high speeds also.
Dirt jump bikes are one more verity in mountain bikes, which have only a front suspension system and used for flying over jumps. They have 16 gears in these bikes which allows the rider to build up the speed they need while making jumps.

Backup Schedule: Learn How Often To Backup If you backup, you are one step away from a disaster. If you backup often, make it several steps. Learn how often to backup and how to make your own backup schedule.
Surely, one can backup to whatever backup medium he wants, but if one does not stick to a backup schedule, most of the efforts, aimed at storing or securing the important information will be spent in vain.
First, we need to figure out what we are backing up, as the backup schedule largely depends on the size of the backup data:
- small amounts of data (important work documents) can be backed up often, hourly, daily and at least weekly
- medium amounts of files (e-mail messages, project documents and work documents) can be backed up daily, weekly or monthly (at least)
- large amounts of data (e-mail messages, project documents, data files, settings files, etc) can be backed up weekly or monthly
- huge amounts of data (all of the above plus images, audios - mp3s and videos - mpegs) can be backed up monthly or yearly
- total backup (a backup of all the data on the computer) can be backed up weekly, monthly or yearly.
Which backup schedule to choose is up to you, but you will also need to choose a backup software to do that and set up the time when to perform a scheduled backup.
First of all, the backup software needs to support the backup medium you want to backup (CD, DVD, FTP, LAN, external USB or flash drive, etc). Next, you select the files you want to backup, choose the time you want to backup and leave it there. Some programs can run as a service and don't need to be launched, but some need to be running when you want the backup to be run. At any case, the computer has to be on at the time of your backup schedule.
Think the time of a backup schedule doesn't matter? What if it runs during your work day and slows down your work computer for an hour or two? To keep working _and_ to stick to the backup schedule, simply set the backup to run a couple of hours before or after your working time. This way you won't be interrupted with a scheduled backup.
